In the late afternoon, as the sun streams in through the windows, we attend a session with the godfather of Tasmanian whisky, Bill Lark, an experience that money can’t buy.
An extremely informative and inspiring afternoon, where we learn how he started with a small still, learned and traveled, and the incredible boost he got from Grants House
who told him they were happy to pass on their knowledge to help him set up a whisky-making business in Tasmania, because life was too short to drink bad whisky and they wanted him to produce the best.
And so he did. Winning awards and using that same spirit of collegial mentoring to guide others in creating their distilleries.

New Reef celebrates Earth Day with a park inauguration

A Newport distillery is giving back to the community and celebrating Earth Day with the dedication of a new park and the release of some new spirits.

On Monday, New Riff Distilling partnered with the Silver Grove Community Foundation to dedicate the new park at Green Valley Pond in Silver Grove. According to the distillery, proceeds from sales of its Silver Grove commemorative whiskey were donated to the foundation to help build the park.

Both the 2024 Silver Grove Bourbon and Silver Grove Rye will be available in New Riff’s gift store beginning April 23 for $55.99. A portion of the proceeds will continue to benefit the Silver Grove Community Foundation.

What is bourbon?

Bourbon is a specific type of whiskey produced in the United States. “All bourbon is whiskey, but not all whiskey isn’t bourbon,” says Gabe Sanchez, cocktail expert at Midnight Rambler at The Joule. And what makes bourbon stand out are the guidelines associated with its production. “Bourbon has more defined rules within the whiskey umbrella,” Jimbeam says. “These rules are a mash bill that is at least 51 percent corn, distilled to less than 160 proof, aged in new charred oak barrels, and only water can be added.

Many whisky makers add flavours or caramel colours to their whiskeys. But even if they follow all the other rules of bourbon, they can’t call their whiskey “bourbon.” The only thing that can be added to the bourbon is water (and that’s just to reduce fermentation).
